Well, as usual I have an opportunity to see my old “Gal Pals” from college days at homecoming this weekend…3 or my 4 main roomies will be in attendance. Then there is me with celiac disease! Should I go and stay over night, just stay for a few hours or really try for the whole event. Since I have to work the next 2 days before the event I will undoubtedly not have enough time to prepare food for the long haul journey. I can probably scrape together enough for a quicky day with the girls! GF bagel for breakfast with cream cheese (I love the Against the Grain brand now, but couldn’t choke it down a few years ago. That is what happens after time removes delicious bread from your Taste Buds’ memories! A bad of chips, or chips and salsa is a quick filler item. Maybe a candy bar or two??? Very healthy? No, not at all! I could also grab a gluten free pizza and hope that somewhere there is a microwave. I have been meaning to prepare meals ahead and freeze them for instances like this, but as I used them all up on our family vacation a few months ago I have not had a chance to replenish them! Now, the last thing I want to do is talk about the celiacs to my girls, it is boring and repetitive….I must make it look like everything is great! I will post on my progress with this event early next week!
So, I have been trying like heck to keep all gluten out of my life……..my hair, my skin, my mouth, my eyes….for several long years now. It has been a bumpy road all the way. All along I have been working so hard and knew in the back of my mind that pills may also contain gluten….well after being sick with a stomach virus at the end of February and then spending 2 weeks trying to eat again with no success right away….I stopped all the medications too. Here is the scoop….my pills made me sick….one in particular…the generic for Lipitor. Now I asked the doc. for a new prescription and of course I cannot afford the non-generic prescription….it is extremely expensive. What will come of it. Of all those pills I was taking, this is the one I actually really need, especially on this gluten free diet. My cholesterol numbers have increased significantly! I will let you know how I procede. I haven’t attacked any of the other pills yet and it will soon be June. One thing I know, I am tired….very much so. Physically, mentally and emotionally!
Well, I must have done something wrong….typed this story….In the Beginning….for about an hour and then couldn’t post it….in fact I actually lost all I typed. As I am all typed out for today I am going to end this post now. Start fresh another day. You can meet some of my main characters in the future….IBS Doc….Dr. K…Hemi Doc…and Dr. B. another day. Maybe I should give Dr. B. and Dr. K. better names as they are pretty big characters in this story. Ta Ta for now.
ps….learned that ricotta cheese is not my friend, but plan to try brands that have had the guts to claim to be gluten free.
